For a Dexterity-based character with low other stats and a non-combat ending, the must-take skill is Potion Making.
But Accessory Crafting and Cooking are also hard to give up.
And I am Wolfram—a veteran of this game.
A veteran who, even when tripping backward, kicks monsters while picking up legendary items and gets back up.
